Butternut (or Honeynut) Boats

Baked butternut (and honeynut) has a buttery-nutty flavor and combines well with Sweet Potato Bake for breakfast. The sweet savor of butternut and honeynut is a wonderful complement to baked sweet potatoes.

Cut butternut and honeynut as desired, whether lengthwise in halves (“boats”) or in smaller sticks or rounds. Bake until soft and serve lightly salted with walnuts and/or avocado.

Breakfast Sandwiches

When preparing your butternut and honeynut for roasting, cut your vegetables into large slices to serve as your sandwich buns. Slice the neck of the butternut and/or honeynut into thick (about 1-inch thick) slices, and slice the bulbous end into halves or quarters. Baked sweet potato halves or rounds (see Sweet Potato Bake) make great breakfast sandwiches with the Butternut (or Honeynut) Boats. See also Sandwiches.
