Loaded Mashed Potatoes
or White Gravy
Carrots add color with a little sweetness, and the onions and celery add a little peppery flavor. Children (including grown-up ones) may enjoy dipping steamed broccoli and cauliflower in their Mashed Potatoes. Savory Mushroom Gravy makes a wonderful gravy for the Mashed Potatoes.
Thinning this recipe with water makes White Gravy for Spaghetti or a white broth for White Chowder Soup. Unless you add beets, then of course everything is pink (Happy Valentine’s Day!).
Ingredients:
- Potatoes
- Carrots
- Beets
- Onions
- Celery
- Jalapeño (see Note on Jalapeño)
- Salt
- Garlic (minced)
- Select Toppings: Savory Mushroom Gravy, Tomatoes, Green Onions, Chives, Hot Peppers
- Walnuts, fresh or toasted (see Toasting Walnuts)
Instructions:
Coarsely chop potatoes and carrots into 1-inch-ish cubes and place in large pot. Dice onions and celery very small, perhaps using a pull chopper or food processor, and put in a pot with some water. Cover and boil until soft. Mash with a potato masher, adding salt (and optionally minced garlic) to taste (see Butter). Serve topped with Savory Mushroom Gravy, with steamed or fresh vegetables, or alongside other dinner meals.
