Eggplant Steaks
Eggplant boasts a soft but textured flesh similar to that of mushrooms. These savory steaks combine well with other dinner meals.
Ingredients:
- Eggplant (no need to peel – see Peeling Vegetables)
- Seasonings: Salt, Black Pepper
- Select Fresh Vegetables: Easy Raw Salsa, Tomatoes, Hot Peppers, Green Onions, Chives, Garlic (minced)
- Walnuts, fresh or toasted (see Toasting Walnuts)
Instructions:
Slice eggplant into ½-inch-thick slices. Lay slices flat in big sauté pan with a little water. Sprinkle with salt, cover, and steam for about 3-5 minutes, until they poke soft but still retain their white color. Remove from pan and flip over onto a plate or dish so you can salt the other side. You’ll want to sprinkle with salt while the steaks are fresh off the pan so the salt absorbs into the flesh and brings out the savor. Top as desired and serve.
