Baked Butternut Breakfast Fries
(or Honeynut)
Fries can add a fun variety to a routine. Avocado wonderfully complements butternut and honeynut dishes. Note that no oil is used in this recipe.
Ingredients:
- Butternut and/or Honeynut Squashes, seeds and stems removed (peeling is unnecessary)
- Salt
- Cinnamon
- Last 5 Minutes: Walnuts
- Select Toppings: Avocado, Sweet Guacamole
Instructions:
Cut butternut into thin strips using a knife, mandolin, or spirulizer. Sprinkle with a little water (not oil) so the seasonings stick, then toss with a little salt (and optionally cinnamon). Spread evenly on a baking pan and bake until soft or crispy, as desired. Add walnuts to the pan in the last 5 minutes of cooking, if desired. Serve with Sweet Guacamole or avocado.
