Sweet Potato Cider

Very similar to Sweet Potato Breakfast but prepared and served as a festive drink to warm you up inside-out. Sweet Potato Cider is a favorite at Christmastime, date night, potlucks, or any occasion. It also makes a great comfort food for the sick, and is especially useful to get some real food into the upset stomach when sickness disturbs the desire to eat. This cider is at least as good chilled and served cold, making it an easy grab-and-go breakfast (a real “meal replacer” still bears the whole-food nutrition of a real meal). Butternut can also be added, if desired.

Dice sweet potatoes (and butternut) into small (1-inch-ish) chunks and put in a pot. Fill the pot only about halfway or less with the diced sweet potatoes. Add water until the sweet potatoes are barely covered, then cover with a lid and simmer until very soft, about 30 minutes. When the sweet potatoes are done cooking, mash/whisk them into the cooking water. Stir in a very small amount of salt at a time to maximize sweetness and flavor. Be careful not to oversalt. Add more water to desired dilution for a cider, usually about doubling the total amount, and heat to desired temperature.

Stir before serving since the sweet potato solids settle a little. Can top with banana chunks and/or raisins (use a spoon to scoop raisins with the cider since raisins sink to the bottom). Ripe banana chunks may dissolve into a creamy froth on top of the hot cider.
