Sweet Potato Breakfast

A nutritional and flavorful improvement on hot cereal. The caramel syrup released by the sweet potatoes gives a wonderful sweetness without any added sweetener. This breakfast is delicious as-is, and any additional toppings are bonus. This same recipe can be alternatively prepared as a cider that can be prepped ahead of time and chilled for a sweet and satisfying grab-and-go breakfast.

Dice sweet potatoes into small (1-inch-ish) chunks and put in pot. Add some water, cover, and cook until soft (about 15-20 mins, depending on the size of the batch). Mash sweet potatoes into the cooking water. Sweet potatoes release a sweet syrup in cooking, so you definitely don’t want to throw out the cooking water. Stir in a little salt to bring out the sweetness, but be careful not to oversalt. Top with walnuts and your choice of fruit.

If you do oversalt the sweet potatoes, just pretend it’s nut butter and dip into it with a banana. Mistakes invite new perspective.
