Banana Custard
(and Variations)

Frozen bananas have the texture of custard. Any add-ins can either be blended in with the frozen bananas to flavor the custard, or stirred in whole as chunks. With the freezer set to a much lower (less cold) setting (see Note on Fridge and Freezer Settings), the bananas don’t freeze rock-solid and are easier to process into custard or enjoy as frozen bites. Banana custard combines well with BaYama Pie or Sweet Potato Cookies.

Ingredients:

  • Ripe Bananas (bananas that are starting to brown generally offer the best sweetness)
  • Fresh or Frozen Fruits: Blueberries, Mulberries, Strawberries, Raspberries, Peaches, Nectarines, Figs, Apricots, Plums, Cherries, Persimmons (see Sweet Persimmon Sorbet)
  • Dried Fruits: Raisins, Prunes, Dates
  • Nuts: Walmonut Butter, Walnuts, Almonds, Cashews, Pecans
  • Shredded Coconut
  • Salt (optional)

Instructions:

At least a few hours before you plan to serve the custard, peel bananas, break into smaller (2-inch-ish) chunks, and place on a plate or in in a container in the freezer. As a fair warning, do not freeze bananas in the peel or you will have a freezing-cold gooey mess trying to peel them after they are frozen.

PREPARE BY HAND: Remove the bananas from the freezer when they are partway frozen and combine in a bowl with any ingredients you want to blend in. Sprinkle with a little salt, if desired, then mash it all together with a potato masher. Once the banana mixture is blended smooth, add any additional ingredients you want to stir in whole, then stir thoroughly to combine. Place the banana mixture back in the freezer until fully frozen, then enjoy at your leisure.

PREPARE WITH FOOD PROCESSOR OR BLENDER: First purée any fresh ingredients that you want to blend into the custard. This will provide the moisture for blending the frozen bananas. Next, place frozen bananas (and any other frozen ingredients you want to blend in) in food processor (or blender) and process until smooth. If no fresh ingredients were puréed first, you may need to add a little water to help the frozen ingredients to blend, but use as little as possible to keep the custard thick. Once the banana mixture is blended smooth, add any additional ingredients you want to stir in whole and stir thoroughly to combine. Serve and enjoy!
