BaYama Pie

Mashing ripe bananas into the prepared sweet potatoes whips up the filling to make a richer pie. Other fruit and nut add-ins provide plenty of variation to the flavor of this sweet dessert.

Ingredients:

  • Sweet Potatoes
  • Salt
  • Walnut Crumb Pie Crust
  • Fresh Fruits: Ripe Bananas, Strawberries, Blueberries, Mulberries, Pineapple, Peaches, Nectarines, Figs, Plums, Cherries, Apples
  • Dried Fruits: Raisins, Prunes, Dates
  • Nuts: Walmonut Butter, Walnuts, Almonds, Cashews, Pecans
  • Coconut

Instructions:

Prepare sweet potatoes as Sweet Potato Bake or Sweet Potato Breakfast. While the sweet potatoes cook, prepare the Walnut Crumb Pie Crust and set aside. If using bananas, mash/whip them until slightly foamy and airy. This will give an extra lightness to the final pie.

When sweet potatoes are done cooking, mash them with a little salt to bring out sweetness (if sweet potatoes were baked, use kitchen shears to cut up the skins in with the flesh). Add any fruits or nuts, whether to be mashed/whipped into the pie filling or stirred in whole, optionally setting aside any you want to use to decorate the top.

Scoop the sweet potato mixture into the Walnut Crumb Pie Crust and smooth the top. Optionally decorate the pie with extra pieces of fruits or nuts, or top with a final walnut crumb crust. Serve hot, warm, cooled, or cold. Serves well on its own or with Banana Custard.
