This section outlines some simple and easy ways to combine vegetables in delicious meals in any season. As you try out and begin to familiarize yourself with the recipes, you may enjoy combining the ideas for your own meal combinations. For example, you may cook up some Roasted Kabocha with Potato and Squash Wedge Fries dipped in Loaded Guacamole. It might take some thinking the first few times, but you’ll quickly get the hang of it.
All dinner recipes can be simply summarized in one:
- Gather vegetables in season.
- Cut vegetables into halves, wedges, slices, sticks, cubes, noodles, rounds, etc. (unless cooking whole).
- Season with salt.
- Cook: steam, sauté (in a little water, for stir-fry or hash), boil (for soup), bake, or roast.
- Add any quick-cooking vegetables to the pan near the end of cooking: bell peppers, onions, mushrooms, walnuts, etc.
- Serve with fresh flavors: tomatoes, bell peppers, cucumbers, avocado, green onions, chives, garlic, hot peppers, walnuts, lemon, etc.
- Give thanks and enjoy!
