Zoodles or Badoodles
Zoodles is zucchini noodles, and Badoodles is butternut noodles. Zoodles and Badoodles can be enjoyed on their own, or they make a great addition to other dishes such as Curly Fries, Soup du Saison, and White Chowder Soup.
Ingredients:
- Zucchini
- Butternut
- Seasonings: Salt, Black Pepper
- Select Fresh Vegetables: Easy Raw Salsa, Loaded Guacamole, Tomatoes, Avocado, Hot Peppers, Green Onions, Chives, Garlic (minced)
- Lemon
- Walnuts, fresh or toasted (see Toasting Walnuts)
Zoodles
Fill a pot about halfway with water and begin heating on stovetop. Heating the water first and adding the Zoodles to the hot water (rather than putting them in cold water and heating it up all together) will help the Zoodles to cook more evenly. Outfit your spirulizer with your choice of blade, then spirulize zucchini to your heart’s content. Add Zoodles to the pot of hot water and boil to desired softness, about 5 minutes. Serve lightly salted with your choice of fresh or steamed vegetables. Black pepper is also very complementary to Zoodles.
Badoodles
As with Zoodles (above), begin heating your water first then prepare your butternut noodles. If your butternut is large, you may want to cut the neck lengthwise into quarters before spirulizing since it is firmer and more difficult to spirulize. Use a knife or mandolin (with a divided/noodle blade) to cut the bulbous part of the butternut into noodles. Add butternut noodles to the pot of hot water and boil to desired softness, about 7-8 minutes. Serve lightly salted with your choice of fresh or steamed vegetables. Butternut dishes are wonderfully complemented by avocado.
