Potato & Squash Combo

Crisps • Sticks • Halves • Wedge Fries • Curly Fries

These are five different renditions of the same general idea, but it’s amazing how much the different cuts and shapes make a difference in a meal, especially for children (including grown-up ones). Any of these variations combines well with Roasted Vegetables, Soups (Soup du Saison, Borscht, White Chowder Soup, Kabocha Curry Soup, or Savory Pumpkin Soup), Vegetable Stir-Fry: Hash or Crisp, Easy Raw Salsa, Loaded Guacamole, or even just chopped fresh vegetables.

Ingredients:

Potato & Squash Crisps

Slice potatoes and summer squash about 1 cm thick (can use a mandolin, if desired). Arrange a layer of potato slices flat on a baking sheet; sprinkle lightly with salt. Then arrange of layer of squash slices on top of the potatoes; sprinkle the squash lightly with salt. Repeat the layers, alternating between potatoes and squash, to fill the pan. Alternating between potatoes and squash gives a good balance of moisture in cooking, since potatoes alone may cook a little dryly, and the squash alone is overly juicy. Bake until the middle pokes through easily with a fork. Cooking time depends on the thickness of the slices and the number of layers. (Electric Ovens: Start with squash on the bottom layer to avoid burning.)

Minced Garlic & Onion

Minced Garlic and Onion adds a nice season to this meal. Mince garlic very small in pull chopper or food processor, scraping down the sides as needed to make sure the garlic is thoroughly minced. Dice the onions (with a knife) then add them to the garlic. Optionally mince the onions even smaller in the pull chopper or food processor, or simply stir them in with the garlic if you appreciate larger pieces of onion. Spread a thin layer of Minced Garlic and Onion on each layer of potatoes and/or squash, and sprinkle lightly with salt.

When summer squash is out of season, Minced Garlic and Onion makes a good replacement for helping the potatoes retain moisture for cooking.

Potato & Squash Sticks

Cut potatoes and squash into thin sticks, using either a knife or a divided blade on a mandolin. As with Crisps, lay out sticks on a baking pan (if cooking in the oven) or large sauté pan (if cooking over stovetop), alternating between layers of potatoes and squash, and lightly salting each layer. Don’t be perfectionistic about it, just throw them in messily with some salt and cook it up. Minced Garlic and Onion also adds great flavor to this meal.

Potato & Squash Halves

This is as simple as it sounds: cut potatoes and squash into halves, arrange in pan cut-side up, sprinkle somewhat generously with salt, and bake (in oven) or steam (on stovetop) until soft. It is surprisingly quite an improvement on baked potatoes, as the salt cooks into the potato and retains the moisture (see Butter). Top the potatoes and squash before cooking with Minced Garlic and Onion for extra flavor and a crispy topping.

Potato & Squash Wedge Fries

Cut potatoes and squash into quarters lengthwise, or in smaller-sized wedges.

OVEN: Line the bottom of the baking pan with squash wedges and sprinkle lightly with salt. Arrange the potato wedges in a layer on top of the squash wedges, and sprinkle lightly with salt. Bake until the potatoes in the center poke through with a fork and they’re as crispy as you like.

STOVETOP: Wedge Fries can also be steam-cooked over stovetop for quicker meal prep. Add a little water to a large sauté pan and arrange the potato wedges in the bottom of the pan. Lightly salt the potato wedges, then arrange the squash wedges on top of the potatoes and sprinkle lightly with salt. Cover the pan with a lid and allow to steam-cook (on medium to low heat) until the wedges in the middle poke through easily with a fork (about 15 minutes).

Once again, Minced Garlic and Onion adds great flavor to this meal.

Potato & Squash Curly Fries

Outfit your spirulizer with your choice of blade. Different blades can result in either curly fries or ribbons. Spirulize potatoes and squash then toss together with salt in a large bowl. Feel free to add other chopped vegetables to the mix, such as carrots, mushrooms, broccoli, cauliflower, or, once again, Minced Garlic and Onion. Spread potato and squash mixture in baking pan (if cooking in the oven) or large sauté pan (if cooking over stovetop) and cook until the middle pokes through easily with a fork.
