Walmonut Butter

Store-bought nut butters are infamous for oil oxidation because they are highly processed and stored for extended periods of time. Oxidized oils are terrible for health and bitter to taste, which commercial nut butters usually cover up by adding sugar. By making your own nut butter, you can significantly decrease the processing and storage time for a naturally sweeter and more flavorful – and more healthful – nut butter for snacking and treats.

Walnuts and almonds are a tasteful combination for a nut butter, with the optional addition of raisins, prunes, or dates for extra sweetness. Toasting the nuts improves the flavor and makes processing easier. Ingredients:

  • Walnuts
  • Almonds
  • Any other nuts, as desired
  • Salt (optional)
  • Dried Fruits: Prunes, Dates, Raisins

Instructions:

Toast walnuts either in the oven or over stovetop. Once they smell aromatic and look sufficiently toasted, remove from heat (oven or stove) and allow to cool until they can be handled. Place toasted nuts in a food processor or blender and process until smooth. Add salt, prunes, dates, and/or raisins, if desired, and process until smooth. Refrigerate leftovers and use within a week or two to minimize oil oxidation.
